Make : Grow : Thrift - Homemade Basil Pesto

With all this rain, then sunshine, then rain again, our basil plants have been kept very happy.


So happy, that it really was time to pick some leaves and make something with them, and as our family loves a bit of basil pesto, I thought, why not give it a go?

Here's how I did it (and it's really very easy!) :

Ingredients :
2 cups fresh basil leaves, packed down
1/3 cup pine nuts
1/2 cup extra virgin olive oil
1/2 cup freshly grated parmesan cheese
3 cloves of garlic, minced
Salt & pepper to taste


1 - Pop the basil leaves and pine nuts into a food processor, and pulse a few times, until combined


2 - Add minced garlic, and pulse a few times, again.
3 - Slowly add olive oil, pulsing between additions (remember to swipe the sides down regularly)
4 - Once olive oil is all in, add parmesan cheese and again, pulse 2-3 times to combine.
5 - Add salt and pepper and stir through.

And you're done...


Now it's all ready to be served up with a bit of grilled fish tonight, and maybe used through a pasta tomorrow. And all that garlic-ky goodness has to be good for my cold, right?

  1. ha! you won't believe this! i was sitting at the (very late lunch/early dinner) table 10 minutes ago eating my pasta with red pesto thinking to myself: "i really need to make green pesto again. what exactly do i put in there? need to check it out..."
    now i sit here, opening google reader, and see your post. isn't this cool? i love when these sort of things happen!
